Por otro lado, calentar el agua con los azúcares a 50oC y añadir el estabilizante.	Heat water with both types of sugar up to 50oC and add stabilizer.
Para obtener esto, es necesario que el estabilizante se disperse de forma óptima: Cuanto más homogénea sea la dispersión, más rápida y completa será la hidratación. Escaldamos con esta solución las yemas y el azúcar previamente blanqueados y coceremos el resultado a la inglesa (85oC), agregamos esta mezcla al chocolate fundido como si se tratara de una ganache, y por último añadimos el estabilizante y el café liofilizado.
